Crispy Crunchy Chickpeas

 

To say that last week was a busy rush of insanity would be a minor understatement. You saw the roundup right? I was running from to and fro on the UnDiet book promo train and when I wasn't out and about- I was at my computer chatting up UnDiet for our upcoming stops on the virtual Book Tour.

I can honestly say, life has never been quite so hectic, and maybe quite as exciting, as it is right now. It may surprise you to know that when I am busy or deeply focussed in my work- even when my work is all about great food- I often forget to get the great food into my body.

For this reason, I have been ensuring that I take time on the weekends to make some dense, easy grab and go power snacks to make sure my blood sugar remains stable and that I am always Eating For Awesome Energy.  I get my fat and protein in to keep my brain humming along and loads of flavour to keep my taste buds dancing.

Recipe for crispy roasted chickpeas

All last week, you could hear me coming from a mile away as my bag tinkle-clinked to the sound of Crispy Crunchy Chickpeas clattering around in my Wean Tubs. These were my go-to snack.

Chickpeas Are Awesome Because...

  • Their fiberrificness supports digestive health.
  • They are packed with anti-oxidants for immune super powers.
  • The combo of fibre and protein makes them a blood sugar regulation dream.
  • The denseness of their fibre increases satiety- meaning you can eat less and feel fuelled and full longer.

Most of us use chickpeas as a hummus spread, which is awesome. Some of us love to use them in stews like I do in one of the recipes in the Online Eating For Awesome Energy course- but few of us eat them as an easy snack in place of nuts or chips. Yes- a perfect nut-free, gluten-free, UnDiet loving snack!

Make them! And make lots. They go quickly!!!  The recipe below is for one organic can (or about 2 cups of cooked), I recommend doubling the recipe.

Spicy Roasted Chickpeas

Yield: 4 servings

Warning: You'll want to make another batch of these Spicy Roasted Chickpeas the second you finish them.

Ingredients
  • 2 cups cooked or 1 can organic chickpeas
  • 2 tbs chipotle hot sauce
  • juice of 1 lime
  • sea salt to taste

Make It Like So
  1. Preheat oven to 400.
  2. Toss chickpeas in hot sauce, lime juice and sea salt.
  3. Lay out on a parchment lined baking sheet and bake for 30 minutes or until chickpeas begin to darken and are crunchy.

 

Cinnamon Spice Chickpeas

Craving something crunchy and a tad sweet? You'll love these.

Ingredients
  • 2 cups cooked, or 1 can organic chickpeas
  • 2 tsp ground cinnamon
  • 1 tbs coconut sugar
  • pinch of sea salt

Make It Like So
  1. Preheat oven to 400.
  2. Toss chickpeas in cinnamon, sugar and sea salt.
  3. Lay out on a parchment lined baking sheet and bake for 30 minutes or until chickpeas begin to darken and are crunchy.

  1. I have to try making these again, using your recipe. A while back I tried them using another blogger's recipe and I couldn't get them crunchy. They sound delicious to me and would be a great alternative to hummus.

    I like the way it says "toss chicken peas in cinnamon". Ha ha. Auto correct. Gotta love it!

      Hehehe whoops- all fixed now, Thanks for the heads up! Definitely don't want to toss chicken peas in cinnamon...whatever that means!

    Tasty and easy.. best combination. I made 4 cups and didn't make to the next day!... I didn't know I could love chickpeas!

    These are my favourite go-to snacks when I'm itching for a crunchy snack. I even managed to toss them together and bake them while I was getting ready for work the next day. I was stoked the whole day knowing I got to come home to them. Great for a snack or to sprinkle over salads. Will definitely make again!
