5 days Vegan
Only good can from adding more plant-based foods into our diet. There is not a single study out there that could argue that point. The challenge however is that so many people have forgotten (or maybe never knew) how easy and delicious these foods can be.
The purpose of this 5 Day Vegan program is not to convert you to being 100% vegan. The idea and intention behind it is simply to ease a transition to healthier way of eating, to introduce you to new foods. I am simply attempting to open your eyes (stomach, taste buds and likely bowels) to a new way of eating, for a short time. You can than take what you like of it, leave what you don’t and still get the benefit. In most cases (I said most) doing something a little bit, is better than not doing it all.

There is more to a vegan diet than lettuce and seeds. There is also more to a healthy vegan or vegetarian diet than bread, pasta, potatoes or frozen “vegan” dinners and burritos. If we are going to make these changes, we should do them right. That’s why this tutorial explains the following:

Try These Recipes On For Size

Sesame Bar
1 cup walnuts
1⁄2 cup sesame seeds
11⁄2 cups pitted dates
11⁄2 cups raisins
1/8 tsp salt
- Pulse all ingredients in food processor until mixture holds together when pressed.
- Press mixture into 9inch square pan, and chill.
- Cut into squares to serve.

Marinated Bean Salad
2 cups fresh green beans cut into 1-inch lengths
1 15 oz can (or 2 cups cooked) lima beans, drained and rinsed
1 15oz can (or 2 cups cooked) kidney beans, drained and rinsed
2 Tbs minced onion
3 medium cloves garlic, pressed
1 large ripe fresh tomato, chopped
1 Tbs chopped fresh basil
1/2 Tbs oregano
1/2 Tbs parsley
3 Tbs fresh lemon juice
2-3 Tbs extra virgin olive oil
salt and cracked black pepper to taste
- Mince onion and press garlic and let sit for 5 minutes to bring out its health-promoting benefits.
- Fill the bottom of a steamer with 2 inches of water.
- While steam is building up in steamer cut green beans.
- Steam for 5 minutes. A fork should pierce them easily when they are done.
- Drain and rinse canned beans. Let beans sit in colander for another couple of minutes to drain excess water.
- Mix all ingredients together. If you have the time, let it marinate for at least 15 minutes. It can keep in the refrigerator for a few days. Keep on hand for a quick meal.
