A Recipe For Sweet Love (Chocolate Covered Dates)


Most of you have heard the news. Maybe from Facebook or maybe when my friend, raw/vegan chef Doug McNish spilled the beans on Twitter. The sweet letters, tweets and comments have been pouring in so how could I not share the sweet love news right here.

It's true what you've heard, or what you may now be guessing. As of last week- my main man and I are engaged.

Exciting? Yes. Very!

Shocking? Yes. Very!

I am not one of those ladies who have dreamed about my wedding since I was five. I haven't a clue what my dress will look like. I don't know if it will be a wedding for two or a wedding for 100. I don't know where it will be, but I do hope the sun will be shining. I also know that even though this whole getting engaged/getting married thing was never something I strived for- I must admit,  it is sweet as can be to know that I get to go through the rest of this AwesomeTown adventure of life, hitched to my very bestest friend in the whole wide world.

It took me a lot of time, a lot of growth, a lot of bad guys, and a lot of getting to know myself to understand what, first and foremost, I truly wanted in my own life. There were things, I learned, that I could not compromise on.

I  believed with a certainty, one that kept me single for the better part of the last 32 years,  that I would rather go through my life solo, keeping to the values I hold to be true and  important- and ensuring I was always doing my best to have a good laugh at whatever life threw my way, than to have to give that up for someone else.

But see- here is where the magic comes in. We always get what we ask for, if we ask for it with the purest of intentions and the tip-top integrity. Once I felt secure, and absolutely content in the life I was living, with a clear idea of how I wanted to live- the most perfect person entered my life... as a dear and special friend.

Never could I have imagined that this most perfect person for me, and I for him, would come into my life just at the right time, just when I was ready. But that's the way it goes. The Universe surely has bigger plans for us than we could fulfill on our own. When it comes to he and I, the whole surely is great than the sum of its parts, and we have both seen amazing things come into fruition since we joined up to take on this world together.

To find someone who loves foraging wild mushrooms, riding bicycles, taking jumping photos,  big trees, starry skies, nature, sunshine and rainbows, great food, even greater health- and all that is needed to achieve that, is a rare and special find.

It is a sweet and blissful thing to find that person, or rather, be put together with that person by the greater powers out there. The thing is- I knew he was a keeper from the start- when I first laid eyes on him five years ago at nutrition school. I would eye his cute little packed snacks and try and strike up conversation over his choice of tea, I would spend my lunch hours telling my girlfriends that I needed to date a guy like him. I don't think he even remembers me being at school with him. He was a little slower to catch on.

My suspicion that he was the one was confirmed when he created the below recipe and made them for dessert to share with my family way back in the early days of our courtship. If anything makes for a 'keeper'- a man who fills medjool dates with almond butter, covers them in chocolate and sprinkles them with sea salt, surely is.

Chocolate Covered Dates

Prep time: 

Cook time: 

Total time: 

Yield: 12-15 servings

Where all of the love began.

  • 12 medjool dates, pitted (can do this by hand)
  • ¾ cup almond butter (or nut/seed butter of choice)
  • 1 dark chocolate bar or make your own raw chocolate sauce using this recipe
  • 1-2 Tbs coconut oil (if using the chocolate bar method).
  • Coconut Oil
  • Sea salt to taste

Make It Like So
  1. Remove pits from your dates.
  2. With the tenderest of loving touches, pry open the dates and put it approx 1 Tbs of almond butter for each date. Close’r on up as best you can.
  3. In a double boiler, melt your chocolate.
  4. Using kitchen tongs (or a fork if you don’t have tongs), dip your almond butter filled date into the chocolate.
  5. Place on parchment paper and continue with the rest.
  6. Sprinkle with a dash of sea salt (or use hemp seeds, ground gogi- whatever you like…) and put in the freezer for about 20 mins, or until serving.
  7. Serve straight out of the freezer.
