Description
A clean and simple one-pot chicken and pineapple fried rice recipe that will no doubt become a family favourite.
Ingredients

- 2 Tbsp coconut oil
- 2 cloves of garlic, minced
- 1 1/2 cups chopped carrot
- 2 cups chopped pineapple
- 1 red pepper, chopped
- 1 1/2 cups cubed zucchini
- 2 chicken breasts, cut into 1 inch cubes (or 1 package of tofu)
- Zest of one lime, plus lime wedges to garnish
- 1/2 cup cashews, chopped
- 3–4 cups cooked brown rice
Sauce- 1/4 cup tamari
- 2 Tbsp sesame oil
- 2 Tbsp fish sauce
- 2 tsp ginger
Instructions
- In a large sauce pan or wok, heat your oil and garlic. Sauté for 3 minutes until aromatic.
- Add carrots, pineapple, red pepper and zucchini, and cook for 10 minutes until vegetables become soft. Add chicken, lime zest, cashews and stir-fry sauce. Cook for 5-10 minutes until thickest piece of chicken is cooked through. Add rice and mix thoroughly, cooking another 5 minutes while stirring to ensure all is evenly heated.
- Serve hot with a wedge of lime.
