Frothy Squashy Cockytails

 

Aside from sprouting our own sprouts, we are pretty limited these days as to what local foods we can be eating up. Squash has become an all too familiar friend lately.

I have seen enough of my dear friend the Butternut Squash to last a lifetime. Ask me anything about squash and I have the answers right here in this little squash of a brain.

Squash, as most of us don't know (or don't bother to even consider), is a fruit. Right. A fruit. It's in the gourd fam along with cucumbers, zucchinis and watermelons. Squash first became a part of the North American diet in the 1940s but were known on this here planet for over 10,000 years. Word on the pyramid is that over in fair Egypt Land, the important peeps were buried with gourds of all kind as it was believed the nourishing powerhouses would fuel the journey to the next life. You have pick ones that have a matte finish- for if they are too shiny, that means they were picked too early and won't be as sweet. Need I go on?

Also loaded with vitamin B6 which is great for PMS and loaded with carotenoids that help prevent the big C.

Why do I know these random factoids? Well, my dears, last week we filmed a little something, something and butternut squash was the star of the show. Check these pics out!

Now, I created some crazy amazing concoctions using butternut squash that blew me away. Who knew this vegetable, I mean fruit, was so diverse. One of the biggest winners of the day was this Frothy Squashy Cockytail that blew the socks off the coffee guzzling, bison burger crew. They loved this sweet ambrosia and it got slip slurped up as soon as we were done shooting.

Frothy Squashy Cockytail (Kid-Friendly Version)

1/3 cup butternut squash, steamed and pureed
1 banana (frozen)
1 Tbs hemp seeds
1 Tbs cashews, soaked (or peanut/almond butter)
1/2 tsp cinnamon
pinch of clove
1-2 tsp raw honey (optional if you like a little sweet)
2 cups water

(note: can replace water, cashews and hemp seeds for 2 cups of your fave nut or seed milk)

  • Place all ingredients into a high powered blender. Blend until smooth.

Frothy Squashy Cockytail (Rum Laced Version)

1/3 cup butternut squash, steamed and pureed
1 banana (frozen)
1 Tbs hemp seeds
1 Tbs cashews, soaked (or peanut/almond butter)
1/2 tsp cinnamon
pinch of clove
1-2 tsp raw honey (optional if you like a little sweet)
2 cups water
1/4 cup St. Lucian Rum!

(note: can replace water, cashews and hemp seeds for 2 cups of your fave nut or seed milk)

  • Place all ingredients into a high powered blender. Blend until smooth.
