Ingredients
Dry Ingredients
  • 1½ cup gluten-free oats
  • 1 cup gluten-free oat bran
  • ½ cup brown rice flour
  • ½ cup chickpea flour
  • ⅓ cup coconut sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 1 tsp cinnamon
  • ¼ tsp ground ginger
Wet Ingredients
  • 1 cup applesauce
  • ½ cup water
  • ¼ cup maple syrup
  • 1 Tbsp lemon juice
  • 1 tsp lemon zest
Make It Like So
  1. Preheat oven to 350 degrees and line muffin tin with unbleached liners.
  2. Mix dry ingredients in a mixing bowl.
  3. Mix wet ingredients in separate bowl or blender.
  4. Pour wet ingredients into dry and mix just until combined.
  5. Dollop into muffin tin and bake for 20-25 minutes (until inserted toothpick comes out clean).
