Dry Ingredients
- 1 1/2 cup gluten-free oats
- 1 cup gluten-free oat bran
- 1/2 cup brown rice flour
- 1/2 cup chickpea flour
- 1/3 cup coconut sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1 tsp cinnamon
- 1/4 tsp ground ginger
Wet Ingredients
- 1 cup applesauce
- 1/2 cup water
- 1/4 cup maple syrup
- 1 Tbsp lemon juice
- 1 tsp lemon zest
Instructions
- Preheat oven to 350 degrees and line muffin tin with unbleached liners.
- Mix dry ingredients in a mixing bowl.
- Mix wet ingredients in separate bowl or blender.
- Pour wet ingredients into dry and mix just until combined.
- Dollop into muffin tin and bake for 20-25 minutes (until inserted toothpick comes out clean).
