  2. That looks awesome, but what about pickles…aren’t they processed? No idea how to make my own! Also, I’ve never seen purple sweet potatoes at our farmer’s market. Could you use red potatoes or another variety?

  3. Great recipe, thank you! However I really don’t agree with dissing the lowly white potato. Even white potatoes are super high in vitamin C (more than oranges, people!), fiber, B6, and potassium to name a few nutrients. For those who are afraid to try a sweet potato just yet on their path to healthier living, there is nothing wrong with embracing white potatoes and cooking them properly (as in, not in the deep fryer) and reaping their health benefits. Every vegetable has its greatness and is on the planet for a reason!

  4. This is the best salad. I have made it numerous times and taken it to get gatherings with rave reviews. The rare time I eat a white baked potato I feel awful afterwards but not when I eat sweet potatoes.

  6. So excited to find these recipes! Being gluten free for health reasons (Celiac) and wanting to be on a plant based diet these recipes will be amazing. I have had a hard time finding vegan recipes that are gluten free and are not based on soy for protein. These recipes will improve my health, look delicious and let me enjoy being able to cook creatively. So happy!

  7. This salad was delicious, so easy and quick to make. I eliminated the oil and used and oilless dressing. I also added pea shoots, turned out wonderful.m Looking forward to trying more of your recipes.
