    I made this chocolate-beet tart in tartlet form (using a muffin pan) and it turned out great. But, I did not understand your instruction on bringing the beets and agave to a boil – was I supposed to add water, or did you just mean to ‘steam’ them together? I improvised and it turned out alright.

  3. Do you think the eggs could be subbed out in this recipe? I’m usually comfortable with subbing one or two eggs to make a recipe vegan, but I don’t have experience with 4!
